Our NV Sparkling Cuvée is a brut style with only 2 grams of residual sugar. It is left on lees for 4 years in the bottle before being disgorged, producing the biscuit and soft creamy characteristics you find in champagne. We've aged 30% of the Sparkling Cuvée in new French oak, barrels, disgorged with a premium oak chardonnay and a small amount of Armagnac.
