100% Chenin Blanc. Baudry’s rare Chinon Blanc hails from two small parcels: 0.8 hectares of vines behind the Château de Sonnay (these are propagated with cuttings from the vineyards of Domaine Huet); and the eroded limestone of Le Clos Guillot. Matthieu Baudry prefers a slow and delicate pressing and the juice ferments naturally in old 500- and 600-litre barrels until it’s dry.
