HARVEST: The grapes are selected and manually harvested around the first week of September WINEMAKING: The grapes are de-stemmed and immediately pressed with a very soft pressing. The must is cleared from the skin and ferments in thermo-regulated steel tanks. AGEING: Aged 5/6 months in steel tank before the bottling.
