Castle Rock Estate Cabernet Sauvignon 2021 from Porongurup in the Great Southern region of Western Australia is an elegant yet powerfully structured wine crafted from original plantings dating back to the 1980s. The wine shows attractive cassis and blackberry aromas with hints of tobacco leaf, black olive, and subtle cedar from 15 months in French oak barriques, one-third of which is new.
