The slow ripening also results in bright aromatics and natural crisp acidity that fil the winery with aromas of passionfruit and raspberries during fermentation. Harvested at sunrise and placed directly into the press, the press was sealed and the juice is retained on its skins for 2 hours. Allowed to free drain, the juice was cold settled to naturally clarify.
