“This chardonnay and pinot noir blend has a copper-pink hue and a restrained bouquet of savoury aromas, clean and fresh, if not especially fruity, invoking dry straw, dried herbs and pot-pourri. The palate tracks the nose, and finishes pleasantly dry and appetising. Winemaking Notes Cool climate Coonawarra Chardonnay and Pinot Noir were harvested separately while sugar levels were low and acidity tight to promote elegance and delicacy in the fruit. Fermentation was enhanced with a yeast that promotes complexity and cool fermented in the presence of juice solids.
