Levantine Hill Estate Sauvignon Blanc Semillon, meticulously produced by Paul Bridgeman in the cool-climate Upper Yarra Valley, Victoria. This estate white blend (87% Sauvignon Blanc, 13% Semillon) features grapes hand-harvested, whole-bunch pressed and fermented individually; Sauvignon Blanc in French oak and Semillon mainly in stainless steel, with a small portion in old barrels, all aged on lees and part-malo elite. The bouquet lifts with papaya, Cape gooseberry, tarragon, rockmelon, canelé, cashew nut and lime zest, underpinned by slate and lanolin nuances.
