Levantine Hill Optume Shiraz, masterfully crafted by Paul Bridgeman from the Yarra Valley’s most exceptional Shiraz parcels, this pinnacle release epitomises refinement and power in harmony. Hand-harvested and vinified with partial whole-bunch fermentation, it reveals lifted aromas of blackberry, blueberry, and dark cherry, layered with violets, black pepper, and savoury spice. The palate is medium-bodied yet intensely flavoured, with silky tannins, vibrant acidity, and an undercurrent of graphite-like minerality.
