Monsieur S comes to us from the Aude Valley, Limoux in Languedoc. Nestled at the foothills of the Pyrenees, Limoux is home to a cool, windy climate and an elevated site. Around 2011, Étienne Fort stopped selling his family fruit to the local co-ops as he knew the fruit was a cut above and made the bold move to go out on his own.
