Nick Spencer Pinot Gris 2025 from Hilltops in NSW is a bright, aromatic Pinot Gris that leans into richness and purity rather than skinny Grigio crunch, grown at around 600 metres on decomposed granite for extra lift and freshness. It is lightly pressed, cool‑fermented in stainless steel and bottled young to lock in fruit and energy.
