Paper Mâché Nero d’Avola, crafted by Ashley Ratcliff in South Australia's Riverland, is a raw, expressive take on Sicily’s noble red. Wild-fermented, unfined and unfiltered, it opens with brooding aromas of black cherry, dark plum and dried herbs. The palate is medium-bodied and savoury, with layers of sour cherry, cacao, and a hint of amaro-like spice, framed by gritty tannins and bright acidity.
