Vissoux's Cremant de Bourgogne is a bone-dry sparkling wine made using 100% Chardonnay from a single site of vines at Le Bois-d'Oingt, just north of the Chermette cellars. This vineyard is a 2.5 hectare southwest-facing site on limestone-clay soil; perfect for Chardonnay (Chermette grafted Chardonnay onto the existing Gamay vines here). Made from handpicked fruit and naturally fermented, the wine is aged for 18 months on lees, after which zero dosage liqueur is added, minimum sulphur is used and the wine isn't fined or filtered.
