In the glass you’ll see aromas of green apple, lime granita, lemon zest and a hint of lanolin, with subtle chalk and talc notes starting to peek through. The palate is intensely citrus‑driven, lemon juice, lime, crunchy green apple and a light saline, mineral snap, all carried on brisk acidity and a mouth‑watering, chalk‑dry finish. Food‑wise, it’s a natural with fresh oysters, prawns, grilled fish, salt‑and‑pepper squid and classic fish and chips.
