Seven Eves Syrah 2021 (bottled as Seven Eves Whole‑Bunch Syrah) is a bright, ultra‑fresh Adelaide Hills shiraz made in a lighter, fragrant style rather than a heavy, oaky red. In the glass, expect vivid red and blue fruits, think sour cherry, raspberry and boysenberry, with plenty of whole‑bunch lift: pepper, dried herbs, stemmy spice and a touch of florals. The palate is medium‑bodied, crunchy and savoury, with pithy, whole‑bunch tannins and a brisk, sour‑cherry finish that’s more about energy and detail than sheer weight.
