Made from 60-year-old bush vines in deep sand, the fruit is destemmed, rested for 3 hours on the skins, then cool-fermented in stainless steel, with a splash of pressings in seasoned puncheons to add nuance. Aromas of strawberry blossom, raspberry and watermelon pastille lead to a dry, delicate palate with fine acidity, a whisper of chalky minerality and a satin texture.
