Peter Schell working wonders with Adelaide Hills Chardonnay - deeply flavoured, textural and balanced with freshness. Fruit was hand harvested in the cool of the morning and then chilled overnight prior to full destemming and crushing the following day. The handpicked fruit was picked in the cool of the morning and chilled overnight, then fully de-stemmed and crushed.
