Both varieties undergo carbonic maceration-bagged whole bunches with minimal oxygen-to accentuate fruit purity and soften harsh acids, then fermented with full bunches and juicy whole berries for aromatic lift and texture. Flavours of red plum, blackberry leaf, and wild herbs mingle with gentle stem spice and a soft, earthy finish. Light-to-medium bodied, with supple tannins and bright acid.
